The Beetroot Stuff

People are forever asking me what else I eat (other than all that wonderful  chocolate!! of course) so I’m going to try sharing a little bit of that with you.. as I have time. This stuff is seriously lifesaving… We simply call it The Beetroot Stuff and if I ever wrote another cookbook it would be there for sure!

Breakfast  TheBEETROOTStuff

Use it how you will.. I love it on just about everything from toasted sandwiches to a soup/salad accompaniment (on either)… YUM. Here I’m enjoying it with a pile of organic rocket from my garden, two organic (yes everything is organic!) eggs, softly poached and topped with cayenne, olive oil, and a grinding of Himalayan crystal salt. Now you can eat raw beetroot everyday, without all the fuss! Beetroot is rich in vitamins/minerals, antioxidants & highly beneficial to the liver.

You need:
3 sweet (preferably organic) raw beetroot
1/4-1/3 cup of apple-cider vinegar
Olive oil – Liberal dash
Celtic salt – to taste
1-2 tablespoons raw agave
1/3 cup tahini

BLEND first five ingredients together until fine, adding the tahini last! Blend once more. Store in an airtight glass jar in the fridge until needed.

So easy. Haven’t yet made it measuring the ingredients exactly, as you can just play with it. Sometimes I add a little bit of cayenne pepper to the mix. If you want it thicker – perfect for dipping – try using more tahini. Delicio!  ♥
