I invented these figgy treats for my daughter pre-wedding, she absolutely LOVED THEM. The filling is based on a fig, then a creamy cacao-carob-tahini layer a lot like my ‘Mint Fudgies’ recipe from the book (only now rose flavoured)… you really can invent anything when you have all of my easy and delectable raw chocolate recipes at your fingertips.
Rose-Fig Raw Cacao Chocolates:
20 plump organic dried figs
Tahini-Rose Filling
2 tablespoons rosewater
2 tablespoons raw organic coconut oil
2 tablespoons raw honey
1/2 teaspoon vanilla powder
3 tablespoons tahini (sesame paste or butter)
3 tablespoons carob powder
1 tablespoon raw cacao powder
Pecans or walnuts (optional) to place above Tahini-Rose Filling
Dried (or fresh) rose petals, to decorate
Take off hard tips from figs with a sharp knife. Squeeze them with fingertips to flatten and lay figs out on a lined tray. Beat all filling ingredients together until smooth, about 2 minutes. Top each fig with a heaped teaspoonful of Tahini-Rose filling. If you’d like nuts inside as well, you can place a pecan or walnut on top of the smooth filling. Next set them in the freezer to harden, about 15 minutes. While these are setting prepare ‘Classic Dark’ (from the book) raw chocolate (recommended), or your favourite. Using a fork and spoon, coat each fig with ‘Classic Dark’ raw chocolate, place them back onto the lined tray, sprinkle with a few dried or fresh rose petals to decorate, and set once more into the freezer to harden completely.

I finally made these and although they never set in the freezer ( had to scoop them out with a spoon ) they are divine ! The combination of tahini and rosewater is just scrumptious. Beautiful recipe Abi !
