Yesterday I visited Naked Treaties…. AGAIN. Naked Treaties is my one-stop-shop when a) I’m away from my raw, superfood filled kitchen b) I’ve somehow managed to RUN OUT of my raw cacao chocolates, and c) I’m in Byron Bay (which is often!). I honestly can’t say no! Nice Nickers ;)  Nickers Bars!!

With their consent, I’ve come home to attempt re-creating one of my Naked Treaties favourites. ‘NICKERS BARS’. Uhuh! Famous world over for their ultra-delicious decedent chocolate texture and taste. Inside Nickers bars there’s a seemingly ‘nougat’ (all raw vegan of course) layer, a delightful raw caramel layer (which I’m guessing is based on Medjool dates), it’s topped with activated almonds mmm and smothered in high quality raw chocolate. They’re so much better than a ‘Snickers’ bar! You’ll never go back.

So here’s my recipe-recreation for what I’ve now called my… drumroll please…  Nice Nickers!! Bars. I have no idea if it’s anything like the way they actually make theirs themselves at Naked Treaties, but after my very enjoyable first attempt I certainly won’t be trying to improve the recipe! I’ve just tried a couple of these, and they’re sooo good!! This latest work of art is right up there with some of the best of my Model Chocolate recipes (read TUCKKK INNN). Not exactly like the Naked Treaties version, but every bit as delicious! My whole family is obsessed, even those who think (we know otherwise) they don’t really care for raw chocolate. 🙂


Lush Almond Layer

1 1/2 cups almond meal

1 rounded tablespoon nut butter of your choice (I used almond butter)

1 tablespoon maple, rice or agave syrup

MIX altogether. The mixture should hold together when squeezed in the palm of your hand. Press firmly into a lined glass dish. Chill Lush Almond Layer in the fridge, while you go on to make Raw Caramel.

Raw Caramel Layer

1 1/2 cups organic pitted Medjool dates

4 tablespoons raw organic coconut oil

1 teaspoon vanilla powder

1/4 teaspoon Himalayan pink salt (or sea salt)

WHIZ ingredients altogether in a food processor for 2 – 3 minutes or until a mass of delicious raw vegan caramel is created.

Remove the chilled Almond Layer from the fridge. Spread it evenly on top with the Raw Caramel. Press some raw organic almonds (or any raw nuts of your choice!) into the top, leaving 2/3 of each almond exposed. Chill again to firm while preparing raw chocolate.

70%+ Raw Chocolate Coating:

70g raw cacao butter, finely chopped

1-2 tablespoon organic raw coconut oil

1/2 teaspoon vanilla powder

1- 2 tablespoons raw dark agave or maple syrup

Pinch of sea salt (brings out the flavours)

1/3 cup raw cacao powder or organic cocoa

MELT cacao butter with coconut oil and vanilla in a glass bowl over another bowl of boiling water. Remove from heat. Whisk in all other ingredients adding raw cacao powder last.  Carefully remove chilled Nickers Bars filling from setting dish. Cut into small bar shapes. Pour some chocolate into the base of another lined dish with raw chocolate. Place bars carefully on top. Drizzle raw chocolate on top before chilling again to harden. You may need to coat again with more raw chocolate depending on how thick you wish it to be. Serve with oh so much love and laughter knowing that these raw chocolate-y good treats will actually AID in keeping you looking Supergorgeous for your nicest of nickers! 😉

Makes up to 15- 20 decadently rich raw bars! Serves 10.

    Hi There! (waves!)
    I saw your segment on the living room tonight and it was a total God-send. I’m currently breastfeeding my 4 /1/2 month old son who has MSPI which means no dairy or soy in my diet as he had intolerance’s to them. Chocolate was the one thing I miss the most and do you know how hard (or expensive) it is to buy chocolate that doesn’t have one of these items in it?! But now I can eat good wholesome chocolatey desserts and I know that wont effect my son! Thank you! I can’t wait to make your recipes =) Im going to get the ingredients tomorrow (and I think my 3 year old may possibly lost her s!*t when I tell her we can have chocolate for breakfast one day too. haha.)         One word – WOW! I made these yesterday and they are a massive hit! Im one of those people who arent a massive fan of “healthy treats” and thought it would be good for me but cant really enjoy it like usual chocolate – boy I was wrong! these are better than my high sugar, full of dairy normal caramel slice! I cant get enough! Ive requested your book for mothers day 😉

    So excited to try these, I bought all the ingredients and am good to go. I couldn’t find vanilla powder either so I’m hoping vanilla essence will be ok. The other thing I coulldnt find where medijool dates? Where do you find these normally? 🙂

    Have made the Pecan Brownie – they are really delicious. Have been looking at the recipe for Nice Nickers Bars. In the Raw Chocolate Coating instructions, you say to melt cacao butter with liquor but there isn’t any liquor in the ingredients. What liquor do you use??

      Sandra, the Nice Nickers bars are just delicious. I actually just threw all the chocolate ingredients in together (it’s the way I tend to cook!), then let it cool before putting it on the caramel layer. This is really worth the extra effort. Such a sin(less) treat.

      Abigail thanks for such a great recipe. Believe it or not, a friend got your site from friends at a Christmas party. All the goodies had come from your site, so now, who knows how far your treats have traveled in Australia??.

      Hi Emma-leigh 🙂 You could make a coconut oil based raw chocolate, only it will melt a LOT faster when you’re eating them, or melt down some raw chocolate blocks from a health food store, or even quality dark organic chocolate (70+ percent). All the best <3

    Oh my goodness I totally forgot about these bars ! I printed the recipe out years ago but never made them. I will definitely have to someday.
    Loving all the beautiful images too, I’ve cut down my magazine intake for ethical and material reasons . The only one I subscribe to now is PORTER, it has such an empowering message for women in every issue.
