This is the easy, healthy, no-fuss pudding I enjoyed cold for breakfast with that delicious vegan creme I mentioned.

Free of everything and anything you don’t want (namely gluten free, dairy free, sugar free, nut free – perfect for those with intolerances) and chockas packed with vitamins, minerals, antioxidants, good fats and fibre instead! So healthy I ate it for breakfast this morning.  ♥ …

 

Moist Banana-Date Chocolate Pudding

5 organic bananas

2 cups dates, washed 2 minutes in hot water

1/2 cup cold pressed macadamia oil

1 teaspoon vanilla powder

1 teaspoon aluminium free baking powder

1 cup organic cocoa powder

1 cup rice flour

WHIZ everything together in the food processor, adding rice flour & baking powder last. Scrape into lined, lightly greased pudding bowl. Seal with foil & rubber bands or with pudding bowl lid if it has one. Cook on low temperature setting (I used a slow cooker/crock pot to cook pudding in) for five – six hours.

Turn out onto a pretty plate, dust with raw cacao powder or extra cocoa & desiccated coconut. Serve warm with co-yo coconut yogurt or rich organic coconut cream & maple syrup! Delish!

10 minutes to prepare, maximum. Up to 6hrs cooking time.
