The poor old potato has gotten quite a lot of flack over recent years. But providing they are fresh, non GM, organic (REAL FLAVOUR!) & still have their skins on they can be quite a satisfying food & do have some valuable nutrients!… Here’s my potato WEDGES. The family LOOOVE these after surfing.

TO MAKE:

Use fresh, washed organic potatoes

Olive oil

Celtic salt

Lemon pepper

Smoked paprika

Simply cut into wedges, coat with seasonings & bake at about 200’C until golden. Serve with a greek salad and sunflower cream ‘cheese’. Experiment with fresh rosemary, onion powder & fresh garlic. True comfort food after some intense exercise. Sometimes we just need to let go of all the do’s & dont’s with food & enjoy life a little, like our potato eating ancestors would have!
