Easter we love you! Only I must say personally speaking, that I do not love hot-cross buns made with all manner of numerals, processed flour, sugars, hydrogenated fats & other evil things I refuse to call food. Neither do I like to feed my family disgusting sugary chocolate eggs made with highly processed cocoa, which has come from farms where the trade is unfair!… Arrghh that feels better!
The good news is, I’m going to make an Easter dessert which I know my family love, is organic & fairtrade which means high in nutrients, fibre, antioxidants & is so easy to make! Especially nice now that, here in Australia, it’s AUTUMN & all the apples are freshly new season 😉 …
200 g pitted prunes, halved
1/4 cup finely ground cacao nibs (use coffee grinder)
1 teaspoon cinnamon pdr
2 tablespoons coconut sugar
2 tablespoons goji berries, cranberries or dried cherries
2 teaspoons coconut oil
Honey & organic cocoa powder for dusting + extra coconut oil for tray.
Line or oil a baking tray lightly with coconut oil. Combine ground cacao nibs with gojis, cinnamon, coconut sugar, prunes & coconut oil. This is your earthy, antioxidant rich filling! Set aside. Core apples, & scrape the skin lightly with a fork. Stuff the filling inside. Now smooth apples with a little honey so they are slightly tacky & roll in a little organic cocoa powder. Place into prepared tray & drizzle over extra honey & sprinklings of cocoa powder. Bake at 170’C, 45 minutes – 1hour.
Serve with my superdelish raw/vegan Chia Cashew Chocolate Cream OR pure organic cream OR vanilla sheeps yogurt & a dusting of cinnamon 😀
