I GET SUPER EXCITED OVER THIS UNIQUE ‘AUSSIE BUSH FOOD‘ OR BUSH ‘TUCKER‘. DEFINITELY ONE OF MY FAVOURITE FOODS. THEY MAKE ME WANT TO FILL EVERY SENTANCE WITH EXCLAMATION MARKS & WRITE EVERYTHING IN CAPITAL LETTERS!!!!! FINALLY! I have some BUNYAS IN MY KITCHEN…Fresh from the organic markets.
As you may have sensed from the way I’ve over-reacted, I’ve been dreadfully deprived. The last time I ate bunya nuts was about two years ago when we went hunting for them in other peoples paddocks. (SHHH!) Even the very thought of them can tend to make one a little desperate.
To prepare: Boil them in lightly salted water (covering the nuts completely) for 20mins – 1/2 an hour. Then take a heavy wooden chopping board (or something similar) and using your body weight, press down on one single nut at a time, so that the thick crusted case around the nut begins to split. Sometimes it will almost split right open which makes life easier! Using a small sharp knife, cut from the top & slice through very tough husk downwards, until you can open it. TRY to get them onto your plate with some olive oil, or organic butter & salt, BEFORE eating them all!! MMMMM YUMMMM
The taste is kind of like a dry-ish waxy potato with the essence of pine cones. I only wish I could share a few with my readers, they’re such a treat. 😉
