Lest we forget.

Chok-Currant Anzacs

1/2 cup cold pressed macadamia oil
1/2 cup pure honey
2 heaped tablespoons of raw macadamia butter or tahini
1 1/2 cups desiccated coconut
1 cup rolled oats
1/2 cup currants
1/2 cup spelt flour
1/2 cup organic cocoa
1 teaspoon aluminium free baking powder

I like to use all organic ingredients in these! Extra flavour and less cost to the earth.

Begin by creaming nut butter with oil and honey, add in all other ingredients and drop by spoonfuls onto cookie trays lined with baking paper. Recipe should make 25. Bake for 20 minutes at 160’C. Allow these to cool on trays to prevent crumbling, and store in an airtight tin/jar ready for raiding!

I served them up to my lads with a pot of Tisano tea! Soo delicious. We’re all addicted to it here. It kind of tastes like milo but without all that milk and sugar and is made from 100% natural ingredients, fully fairtrade and organic – love it 🙂
