Finally! Here’s the simple cabbage/kale salad my daughter made for us the morning she left for college. Colour extraordinaire! It was crisp & delicious & a hint spicy. Unfortunately she didn’t write it down as she went as we were in a hurry but I managed to snap these gorgeous pix & I remember the ingredients so GUESSTIMATE using fresh & organic & you’ll be close enough 😉

Shredded, chopped & julienned: Red cabbage, carrots, shallots, fresh red chillies, green capsicum, kale, lemon thyme (opt). Dressing: organic apple cider vinegar, organic olive oil, salt.
